DR Flavors & Ingredients opened the doors of its laboratories and manufacturing facilities to the EngenhAção project, offering a behind-the-scenes look at the work of the engineers involved in developing ingredients, flavors, and solutions for the food industry.

Brazil faces a growing shortage of engineering professionals. Currently, the shortage is estimated at approximately 75 thousand engineers, and it is expected to exceed 1 million professionals by 2030. Against this backdrop, initiatives that bring young people closer to the engineering profession and introduce them to new career opportunities are becoming increasingly important.

With this purpose in mind, EngenhAção was created, a project by the National Academy of Engineering (ANE), championed in the state of Santa Catarina by Grupo ND, with the goal of inspiring students and the broader community to explore the many fields of engineering and demonstrating how these professionals directly contribute to the country’s development.

In the episode “The Invisible Engineering Behind Food,” the project team shows that engineering extends far beyond major infrastructure projects and civil construction. It is also present at breakfast, in afternoon snacks, and in desserts enjoyed by millions of Brazilians through the development of ingredients, flavors, and solutions for the food industry.

To tell this story, the program visited DR Flavors & Ingredients, a leading Brazilian producer of flavors, extracts, and ingredients for the food and beverage industry. With more than one in every ten employees holding an engineering degree, the company opened the doors of its laboratories and Research & Development facilities to show how food engineers, chemical engineers, and other specialists work together to turn science into innovation.

The report follows the different stages involved in developing ingredients for the food industry, from evaluating raw materials and their benefits to consumers to conducting economic feasibility studies, chemical and microbiological analyses, manufacturing processes, and quality control. The result is an immersive look at the “invisible engineering” that ensures the flavor, safety, stability, and consistency of foods consumed every day by millions of people.

By participating in the initiative, DR Flavors & Ingredients reinforces its commitment to advancing engineering, science, and innovation, helping bring society closer to a profession that is essential to the country’s technological and industrial development.

Duas Rodas’ innovative biotechnology project is recognized the Inova Talents 2024 Award

Researcher Tathiane and manager Salvelino received the award during the IEL Summit Duas Rodas’ innovation project won second place in the Innovative Project category of the Santa Catarina edition of the Inova Talentos 2024 Award, an initiative by Instituto Euvaldo Lodi (IEL/SC), which aims to stimulate the involvement and performance of scholarship fellows and tutors in innovation journeys, value the participants of the work and the results achieved. It also aims to inspire new scholars, tutors and companies to manage collaborative innovation and carry out projects that have an impact on people, companies and society, maximizing the motivation of young talents and their retention by companies. The recognition was announced at a ceremony on August 21, during the IEL Summit, held in Joinville (SC). The initiative, which began in August 2023, addresses the feasibility study for the development of new products from fermentation and enzymatic bioprocesses. Conducted by Inova Talentos Program fellow Tathiane Ferroni Passos, PhD in Chemistry from USP, the project is mentored by Salvelino Nunes, Research Manager and Advanced Technologies, and coordinated by Iselde Kelbert, Flavor Manager at Duas Rodas. With a focus on healthiness, the project aims to promote the development of a biotechnological solution that is low in salt, does not contain allergens and ingredients of animal origin, and is non-GMO, allowing clean labeling to be applied. “At the same time, we are working on a unique sensory profile, capable of intensifying the perception of umami taste in a more natural way, without the need to add monosodium glutamate”, says the researcher. Salvelino points out that Duas Rodas has been expanding investments in the development of innovative ingredients based on bioprocesses that include appeals for naturalness and conscious indulgence, growing movements in the food market. The expectation is that the study conducted by researcher Tathiane will result in innovative solutions and the expansion of the company’s portfolio of ingredients produced by biotechnology, integrating the Taste Full Technologies platform, which brings together technologies that connect the food industry to consumers in search of products with healthier formulations that don’t sacrifice taste and indulgence. “We started with the biotechnology project, drawing up this feasibility study for the development of new products. The IEL’s search for a professional to work with bioprocesses was a pleasant surprise, since several excellent candidates were considered. We selected the researcher Tathiane, who is conducting the activities in great connection with the internal team and integration with the project, achieving excellent results”, says Iselde. “As the first fellow via IEL at Duas Rodas, I am very happy with the results of this industry and researcher interaction, opening doors for other professionals to also join the company”, says researcher Tathiane. President of Duas Rodas will be honored with the CNI Industrial Merit, the highest honor in Brazilian industry

Jaraguá do Sul, June 2024 – The professional trajectory of the President of Duas Rodas, Leonardo Fausto Zipf, will be honored by the National Confederation of Industry (CNI) with the award of the Order of Merit to the businessman from Santa Catarina, the highest honor of the industry in Brazil given to personalities and institutions that contribute significantly to the development of Brazilian industry. The ceremony will be held at 10:30 am on Friday, the 21st, at the headquarters of the Federation of Industries of Santa Catarina (FIESC), in Florianópolis (SC). The FIESC nomination was unanimously approved by the CNI´s Board of Directors in March this year. “It is an honor and an immense joy to receive this national award, a significant recognition that I share with our employees and all the generations that have guided the company over its almost 100 years. I am convinced that the success of major business projects such as Duas Rodas is always the result of a joint effort, a lot of determination, a spirit of unity, the ability to innovate and resilience, with a focus on the present and an eye on the future”, says Leonardo. Throughout his 36-year history at Duas Rodas, the entrepreneur led the vigorous process of national and international expansion of the company that was created in 1925 in Jaraguá do Sul (SC), positioning it as a leader in the Latin American food ingredients market. Specialitá Aera 1 is among those chosen to compete in the final in the Most Innovative Product category of the main Brazilian award for the food ingredients, products and supplements industry, whose proposal is to value innovation and recognize the creation of products in the sector that offer benefits to the end consumer. For the first time in Brazil, Specialitá Aera was developed using a combination of raw material and process technologies.
